Barrel-aged Spontaneous Fermentation
Brewed in February 2021 using the orthodox methods of traditional Belgian lambic breweries, this beer began with a labour-intensive turbid mashing, followed by open air cooling & inoculation in our Koelschip vessel. Spontaneous fermentation & extended barrel-aging result in a beer with a uniquely delicious & complex character.

BREWER’S NOTES
This beer has been in the works for over 2 years! It was brewed in the tradition of the lambic style, we used labour-intensive turbid mashing techniques, along with aged hops (2016 Tardif de Bourgogne, France) to make this special beer. The wort was cooled overnight in our coolship (open to the brewery & whatever wild yeasts & organisms were around), then racked into barrels to begin its spontaneous fermentation.
After barrel-aging in oak for 2 years, it developed an earthy, Lambic-like character, with notes of lemon, a restrained sweet flavour and a tart finish.
